History
    •    The estate belongs to brothers Pascal and Gilles Soulas, from a farming family in Pouzols (Hérault) who originally grew fruit trees.
    •    They turned to vines under the influence of Laurent Vaillé (La Grange des Pères, who died in 2021), alongside whom they learned winemaking.
    •    In 2016 they took over vineyards on the Aniane hillsides that had belonged to Gérard Depardieu. Their first vintage is 2016.
    •    Within a few vintages the estate has become a cult name in the Languedoc, talked about across the region.

The estate in figures
    •    A small vineyard: about 6 ha according to one source, 2 ha at the Les Pradels lieu-dit according to another.
    •    Tiny production, around 3,000 bottles a year of the red according to wine enthusiasts.

The wines
    •    Red (AOP Languedoc): the flagship. A blend of Syrah, Grenache and Mourvèdre, with a touch of Carignan since 2021.
    •    White: based on Terret Blanc, made since 2021, labelled Languedoc or Vin de France depending on the vintage.

The signature
    •    Balanced, elegant, silky reds with dark fruit, spice and garrigue notes.
    •    Finesse and complexity, without the heaviness often associated with southern wines. The 2018 was described as floral, almost Burgundian.
    •    Wines for ageing: more than 10 years of potential. Give them 2 or 3 years, or decant young vintages for at least an hour.

In the vineyard
    •    Clay-limestone soils of the Terrasses du Larzac.
    •    Farming that respects biodiversity, without organic certification.
    •    Hand harvesting.
