Les Saugettes comes from a single small plot in the Rotalier and Grusse area of the southern Jura (Sud Revermont). It faces west, on clay-limestone and marl soils close to those of the Côte de Beaune. The Chardonnay vines, planted around 1970, are over 50 years old and give low yields. The grapes are hand-harvested and fermented as whole clusters with native yeasts. The wine is aged for 12 months in 456-litre barrels, 30% new, then 8 months in stainless steel, and bottled unfined and unfiltered.
The wine is bright in colour, with a nose of citrus and flint. The palate is vibrant and taut, with elegant minerality, a saline touch and good persistence. This is a fresh, precise Jura Chardonnay, livelier and more saline than Les Abeilles.
