Le Châtaignier comes from a single plot in Vincelles, in the southern Jura (Sud Revermont), facing south-west on Bathonian limestone and grey marl. The old Savagnin vines, planted in 1959 by massal selection, are grown with cover crops. The grapes are hand-harvested as whole bunches and fermented with native yeasts after a long maceration. The wine is aged for 12 months in 456-litre barrels, 30% new, then 8 months in stainless steel, and bottled unfined and unfiltered.
The nose is seductive, with floral and mineral notes and rare aromatic intensity. The palate is full and round, carried by bright freshness and vibrant minerality that give it tension and racy elegance. The finish is long and persistent. This is a deep, luminous old-vine Savagnin that shows another side of the Jura.
